Taco Chili

This is a variation of a Weight Watchers recipe that I had at my Cousin Deanie's house in California many years ago.  It is my go-to recipe when I need to make a big pot of something delicious, quick, and easy. My children started duplicating this recipe from sight when they were very young. 
 
Mexican cheese blend,  peppers, lettuce, and onions make lovely toppings in a hard taco shell. This is also the perfect complement on top of baked potatoes or French fries. Add a little extra Munajj TexMex seasoning to make this dish even spicier.  Olé!
 
Ingredients (Serves  10-12)
•1 lb. ground turkey or lean beef
•1 large onion, chopped
•1 (1 oz.) package dry Ranch dressing mix
•1 Tbl. Munajj TexMex Seasoning
•1 (16 oz.) can pinto beans (or black beans)
•2 (16 oz.) cans chili beans (either hot or regular)
•1 (16 oz.) can whole kernel corn
•1 (10 oz.) can Mexican-style tomatoes, such as Rotel
•1 (16 oz.) can diced tomatoes (any flavor)
Optional toppings - shredded cheese, sour cream, scallions, tortilla chips, corn chips
 
Preparation
1. Brown meat and onions.
2. Mix Ranch & Taco seasonings into the meat.
3. Add the rest of the ingredients, undrained to the mixture. Simmer on low for 1 hour.
4. Serve hot with desired toppings.
 
Variations 
This is just as delicious without meat or with a meatless alternative.  A splash of Worcestershire sauce when the meat is browning and sprinkle salt-free Munajj Native Seasoning adds richness.
